Last night me and the family had an awesome Hot Pot/ Shabu Shabu dinner.
We were able to finish everything but left a few amount of the raw ingredients such as
Thinly Sliced Beef Brisket (about 4-5 small slices and crumbling)
Leftover Sukiyaki soup base/sauce
Half stick of carrot
When I came home I realized the remaining ingredients weren’t enough for a 2nd round of Shabu Shabu but were good enough for some stir fry
So here’s a quick and easy recipe for a quick dinner or lunch stir fry for Beef Sukiyaki.
Prep the veggies first by chopping and washing the Napa cabbage and make thinly slices of carrots by using a peeler
Heat your pan for 1-2 minutes in medium high (5 or 5.5 on the knob) . Put some oil and a table spoon of either butter or garlic butter and spread evenly over pan
Lower heat slightly to medium. And add the thinly sliced brisket to sear for about 2-3 minutes each side. Since the meat is thinly sliced, the beef cooks faster. Only turn over the meat when each side is brown.
Add left over sukiyaki soup base as flavoring. Add enough to taste.
Stir the meat with the sukiyaki sauce then cover pan for 1 minute to simmer.
Add the cabbage and carrots and toss around with a tong. You can add little bit more of the sukiyaki base for flavor.
Cover the pan for 2-3 minutes. After which toss a little more and serve.
Great over steamed brown or white rice. Enjoy
